Guilt Free Fries from The Skinnygirl Dish by Bethenny Frankel
Potatoes are a starchy vegetable, but they are still a nutrient-dense vegetable, so I'm including this semmingly decadent but actually good-investment recipe for fries. Skip the fast food and make these at home. You'll be glad you did.
Serves 4
4 baking potatoes
1 tbsp olive oil
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
1. Preheat theoven to 425* F. Cut the potatoes into wedges or strips, leaving the skins on. Toss them with the olive oil, salt and pepper. Arrange them in a single layer on a foil-lined baking sheet. Sprinkle with the paprika.
2. Bake for 25-45 mins or until the potatoes are crisp. Serve hot.
Use-what you have variations:
Variation 1 - instead of baking potatoes try: Yukon Gold, Sweet potatoes or yams or fingerling potatoes cut in half
Variation 2 - instead of olive oil, try any other cooking oil
Variation 3 - instead of salt, try any seasoning salt
Variation 4 - instead of paprika try: garlic powder, ground cumin, chopped fresh herbs, cinnamon (for sweet potato option), any seasoning mix .
