I'm so over winter.....

I didn't get to post yesterday, I was so stinkin' busy getting ready for my trip.  I got a LOT of work done, things all ready, packed and yet....  no trip today.

I knew it was iffy with the weather forecast, but they couldn't possibly get it right on two occasions, right?  WRONG!  They were dead on again.  It is snowing like crazy outside, flights are canceled, and I am NOT going to Chicago to the Chalene Johnson Social Media Training!  I am so bummed, I've been up since 5:00 this morning watching the flights, the weather, the road conditions and anything else I could think of.   BUT, all the watching didn't matter, it wasn't going to change a thing.

So, I had a quick little pity party for myself and now I am moving on with my day.  Luckily,  I got most of my work done.  I can take my time today with my workouts, get caught up on my reading and audio.  So, I'm sure it will still be a good day.  I just won't be freezing in Chicago, I'll be freezing at home!

Fit Club last night was a blast.  We did Slim Series - Firm it up!  That one is killer.  I am feeling it this morning!  It is amazing to me that I can sweat as much with this workout as I do with my turbo workouts!  Love it! I also LOVE Debbie Siebers.  She is the nicest person.

muscle burns fat!

I just love Chalene Johnson!  She is so motivating and truly wants us to be healthy and happy!  If you have done her Turbo Jam videos, you know that she is so full of energy and peppy!  I know that I have mentioned it before (probably many times over), but Turbo Jam is what got me started back on my physical fitness journey.  It is so much fun, you don't even feel like you are working out, it's a blast!  I liked it so much that I even got certified to teach TurboKick ( the live version of Turbo Jam) and piyo ( a combo of pilates and yoga, it's unlike any pilates or yoga you've ever been to!)    Check out Chalene Johnson on twitter or facebook and be sure to watch her motivational videos on youtube!

Chalene came out with ChaLEAN Extreme a little over a year ago and it is another favorite!  In this workout she talks about muscle burning fat!  You will not bulk up from lifting weights, you will get lean muscle mass and look GREAT!

ChaLEAN Extreme is a 90 day program that will boost your metabolism and have you burning body fat like crazy!  15 workouts and a motivational cd by Chalene and a healthy eats and  kitchen makeover dvd.  You also get a meal plan and recipes that will help you reach your goals!

I have done 1 round of this program and will be doing it again when I finish the current program of P90X and Slim in 6.  I highly recommend this workout if you like to lift weights and want to see great results!

The meal plan is heavy on animal products.  I think it can be subbed for a vegetarian or vegan plan, but it will take some modifications.

High Fiber Breakfast Muffin

1 - 1/2 cups wheat bran fiber
1 cup low-fat buttermilk
1/3 cup canola oil
1 egg
2/3 cup brown sugar, unpacked
1/2 tsp vanilla extract
1 cup all-purpose flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1/2 cup chopped walnuts
12 paper muffin liners

Preheat oven to 375 degrees.  Line 12 muffin cups with paper muffin liners.  Mix the wheat bran and the buttermilk and allow to stand for 10 mins.  Then beat the oil, egg, sugar and vanilla and ad this to the bran mixture.  In a separate bowl, mix the flour, baking soda, baking powder and salt.  Sift the flour mix into the buttermilk mix and combine, but do not overmix.  Then fold in the walnuts.  Spoon batter into muffin tins and bake for 15 - 20 mins or until a toothpick inserted in a muffin comes out clean.  Serve 1 muffin with 1/2 cup cottage cheese or 1 egg for breakfast.

Fit Club Monday!

Today is Fit Club! I love Mondays. I get to get together with a good group of people, sometimes it is many, other times it is a one on one session. We workout, talk about healthy eating, motivation and anything else that comes up! (how hot is Shaun T????) This week's recipe is:

Southwest Bean and Corn Cakes
from Venturesome Vegetarian Cooking by J.M. Hirsch and Michelle Hirsch

Top these hearty, spicy patties with a fiery salsa.

1- 1/2 cups corn kernals
1 cup cornmeal
1/2 cup whole wheat pastry flour ( should be able to find this at a health food store)
1- 1/2 tsp baking powder
1 tsp ground cumin
1 tsp sea salt
1 tsp red pepper flakes
1 tbsp lime juice
Pinch cayenne pepper
1/4 tsp freshly ground black pepper
1 tsp paprika
15 oz can of black beans
1 med yellow onion, diced
1 med carrot, finely grated
1 -3/4 cups plain rice milk
2 tsp cider vinegar

Preheat the oven to 350 degrees F. Lightly oil a baking sheet.

in a large bowl, combine the corn kernals,cornmeal, flour, baking powder, cumin, slat, red pepper flakes, lime juice, cayeen pepper, black pepper and paprika. Mix well.

In a separate bowl, use a potato masher to coarsely mash the beans. Add the onion and carrot and mix to form a thick mixture.

Add the rice milk and vinegar to the beans and mix to combine. Add the bean and rice milk mix to the corn mix and mix together.

Use your hands to scoopsome of the dough to make burger-size patties. Arrange patties on the baking sheet and bake 15 mins. Flip the patties and bake another 15 mins or until crisp around the edges.


This week's workout is Slim in 6! This is a great workout for women, one of the most effective. If you want results, this is the one! My friend Tina lost 90 lbs with Slim in 6!!! Purchase Slim in 6.
