After a quick trip to the grocery, I'm all set to make the Rocky Road Fudge Bars. This treat isn't as easy to make as the Chocolate Chip Cookies since it requires several 'phases' but it's worth the extra effort for the sweet, chocolate-y, fudgy goodness you'd get afterwards.
First step is to make the chocolate brownie base. I was supposed to make this from scratch but I wasn't able to find the unsweetened chocolate bars at the grocery so I go for the next (actually even better) best thing - Ghirardelli's Triple Chocolate brownie mix!
All it takes are some milk chocolate chips, dark chocolate chips for melting, marshmallows, walnuts, butter, cream cheese, eggs, vanilla, sugar and flour:

I just added a cup of walnuts for the 'rocky road' part then poured it into the pan.
Next is the cream filling which calls for some butter, eggs, sugar, flour, vanilla and cream cheese...Pour it over the chocolate brownie mixture...
Then sprinkle the milk chocolate chips evenly. This would then go into the oven for about 10 minutes.
While waiting, next step is to make the frosting which is pretty easy...just melt the dark chocolate chips over very low heat with about a quarter of a cup of milk...
And for some yummier goodness, add about a quarter of a bar of cream cheese...
By this time, the brownie with cream cheese filling should just be about ready. Once it turns golden brown, take it out from the oven and cover it with the marshmallows (on a side note, yes, the marshmallows are pink :))...
And voila! You now have some sinful chocolate goodness in a pan:
The waiting part is the hardest...this has to cool down first then chilled for a couple of hours. I guess now is a good time to go back to my book. Hopefully my Rocky Road Fudge Bars would be ready by the time I finish it :)
