Muffins Part 2

Our cable TV was out for a couple of hours earlier. I didn't feel like watching DVDs just yet and wasn't up to reading so I decided to bake instead! I'm now compensating for the past months that I wasn't able to 'work' in the kitchen. Hahaha. I wanted something easy so I fell back to an old favorite - Spiced Pineapple Muffins. It's like having a mini pineapple upside down cake in a cup but made even better with the mix of butter and cinnamon. For the muffin batter, you'll need some flour, sugar, milk, oil, eggs and baking powder.

For the topping, it's crushed pineapple, brown sugar, butter and cinnamon.


Prepare the topping first by mixing the sugar, butter and cinnamon with the pineapple. Microwave it for a minute or two until the butter melts.

Next, make the batter by first mixing the oil and sugar to a smooth consistency.

Add the eggs one at a time and mix until well-blended.

Then alternate adding the sifted flour with baking powder and milk to the oil-sugar-egg mixture. Make sure to end with the dry ingredients.


Line the muffin pan with the paper cups and fill it with about a fourth of a cup of the batter.


Then top it with a spoonful of the pineapple topping.


Bake for about 15 minutes until the muffin rises and turns golden brown.


And there you have it, the perfect treat to end the day :)
